Strawberry Matcha Protein Waffles

These waffles are just as crispy on the outside and fluffy on the inside as those regular waffles, but somehow made from cottage cheese and eggs?? The best thing about them has to be the strawberry matcha combo though!


Ingredients:

  • 4 eggs

  • 1 cup full fat cottage cheese

  • 1 cup old fashioned oats

  • 1 cup matcha protein powder (like this one)

  • 2 tsp matcha powdered, seived

  • Strawberries

Equipments:


Instructions:

  1. Dice up about 8 - 10 strawberries and set aside

  2. Add eggs, cottage cheese, oats, matcha powder (remember to sieve) and protein powder into the blender and blend until no clumps remain

  3. Gently fold in diced strawberries to the above mixture

  4. Heat up waffle maker and spray neutral oil

  5. Pour mixture into waffle maker and cook until edges are crispy (my waffle maker took about 3 minutes!)

  6. Serve with toppings of choice (I went with whipped coconut cream and more strawberries!)

Notes: You shouldn’t need to add any additional sweetener since most protein powders come already sweetened, if not - you can add any sweetener of your choice or just skip it and top the waffles off with fruits and chocolate chips :)
