Matcha Shortbread Cookies

Buttery, bite-sized, and your favorite not-too-sweet but sweet shortbread cookies that are perfect for an afternoon pick-me-up or a post-meal treat!


Ingredients:

  • 8 tbsp of unsalted butter

  • 2/3 cup of powdered sugar

  • 1 egg yolk

  • 2 tbsp of corn starch

  • 2 tbsp of milk powder

  • 1/3 tsp of vanilla extract

  • 1 tbsp of matcha powder

  • 1 cup of all purpose flour

  • White chocolate chips for the # of cookies you make

Instructions:

  1. Preheat oven to 320 F and make sure your butter is at room temp

  2. Fold butter, powdered sugar, and egg yolk together

  3. Add in corn starch, milk powder, and vanilla extract; continue folding mixture until smooth

  4. Sift in matcha powder and all-purpose flour - the mixture should thicken at this point and become a dough as you continue folding with your hands

  5. Fold the dough into ball form, then flatten on a cutting board

  6. Using cookie cutters, cut out flower shaped cookie doughs

  7. Add white chocolate chips to the middle of each flower, as desired

  8. Bake @ 320 F for 20 minutes
