Mango Coconut Chia Pudding

Just like mango sticky rice, but healthier and creamier! If your mango’s ripe enough, you won’t even need any added sugar on top!


Ingredients:

  • 1 large mango (Alphonse or Haden variety if you can find them!)

  • 1 cup coconut milk

  • 4 tbsp chia seeds

  • 2 tbsp of sweetener of choice: agave or condensed milk

  • Toppings of choice: granola or coconut shreds

Instructions:

  1. Mix coconut milk and chia seeds together (you can make it in bulk as well by doubling the quantity)

  2. Transfer above mixture into an air-tight container and chill in fridge for 1 - 2 hours

  3. Shave mango and blend up half the mango flesh to create mango puree

  4. Slice up the other half of the mango flesh to serve as pudding topping

  5. Once the coconut chia pudding has formed, layer sliced mangos, mango puree, additional toppings of choice, and sweetener of choice on top

  6. Enjoy!
