Mango Sticky Rice Roll With Microwave

Can you believe you can make sticky rice just with the microwave? This is the fastest and easiest way to whip up mango sticky rice, and a way cleaner way to serve your little ones!


Ingredients:

  • 2 cups of sweet glutinous rice

  • 1 mango

  • Vietnamese rice paper (like THESE)

  • Coconut cream

  • Coconut milk (for dipping)

Instructions:

  1. Wash 2 cups of sweet glutinous rice, rinse well

  2. Add 2 cups of water to washed rice, cover with a wet paper towel

  3. Microwave the covered rice for 4-minutes, take it out and fluff the rice, then microwave for another 4-minutes (if rice is not sticky and soft after 8-minutes, continue microwaving at 1-minute increments)

  4. Skin the mango and slice into thin strips

  5. Wet rice paper in sink, spread it out on a flat surface and layer sticky rice, mango, and 2 tsp of coconut cream

  6. Wrap your rice paper as you would a burrito, remembering to pull the ingredients towards you as you roll up to close up the roll to create a right roll

  7. Pour some coconut milk into a dipping bowl and serve with your mango sticky rice roll!
