Tocino-Inspired Sweet & Salty Pork

Filipino-inspired sweet and salty pork dish is not only easy to whip up at home but pairs soooo nicely with a heaping bowl of rice!


Ingredients:

  • 2 lbs of pork shoulder-butt

  • 1/2 cup of brown sugar

  • 1 tbsp of salt

  • 1 tbsp of soy sauce

  • 2 tbsp of rice vinegar

  • 5 - 6 cloves of minced garlic

  • 1 tsp of black pepper

  • Neutral oil of choice for cooking

  • (Optional): green onions for garnish

Instructions:

  1. Slice up the pork shoulder-butt thinly (MAKE SURE you have a nicely sharpened knife for this recipe, the key is to slice against the grain and make sure each slice is thiiiiin!)

  2. Place pork slices in a big bowl and add in brown sugar, salt, soy sauce, rice vinegar, minced garlic, and black pepper

  3. Rub the marinade in thoroughly

  4. Cover the marinaded pork and refrigerate overnight

  5. On medium heat, cook and simmer each slice, making sure every slice is touching the surface of your pan

  6. Add small amounts of water in increments while pork cooks as needed

  7. When water is totally absorbed, add small amounts of neutral oil and cook until pork caramelizes

  8. Serve with hot rice and vegetable of choice!
