Spicy Salmon Poké Inari Sushi

An explosion of flavors and textures all in one pocket! Could be eaten as a savory snack or an entire meal - either way, you will surely feel full and satisfied after eating it. This is a colorful twist on the traditional, typically rice-filled Inari sushi where we cut out half the rice and top it with a ton of veggies and proteins!


Ingredients:

  • 1 can of seasoned bean curd (or Inari, may also come in a packet)

  • 5 oz salmon, cubed

  • 1/2 tsp soy sauce

  • 1/2 tsp sesame oil

  • 1/2 tsp Sriracha (or more, if you like it more spicy)

  • 1 tbsp mayonnaise (regular or Kewpie both work!)

  • 1/2 stalk of green onions, chopped for garnish

  • Fish roe (tobiko) for garnish

  • Multigrain rice (recipe here!)


Instructions:

  1. Cube up the salmon

  2. Add soy sauce, sesame oil, Sriracha, and mayonnaise to the salmon and mix thoroughly

  3. Open Inari packet and drain the sauce

  4. Layer Inari pouches halfway up with rice then top off with the salmon mixture

  5. Top off with green onions and fish roe

  6. You can make a colorful assortment of Inari pouches with cucumber salad, seaweed salad, corn salad, or even egg salad!
