Rice Cooker Hainan Chicken

Juicy, savory, and all it takes is the click of a button! If you have a rice cooker, this is a quick and easy weekday meal you can enjoy with the whole family!


Ingredients:

  • 12 - 15 chicken wings

  • Marinade:

    • 1 tbsp turmeric

    • 2 tsp salt

    • 2 tsp sesame oil

    • 4 tbsp water

    • 2 tbsp oyster sauce

  • 4 cloves of garlic

  • 1 big knob of ginger

  • 3 bunches of scallions

  • 1 cup of rice

  • 1 cup of salted chicken stock

  • Sauce:

    • 1/8 cup of minced garlic

    • 1/8 cup of minced shallots

    • 2 bunches of chopped scallions

    • 1/4 cup of neutral oil

Instructions:

  1. Wash your rice!!

  2. Marinade chicken wings with turmeric, salt, sesame oil, water, oyster sauce; massage well and set aside for 10 minutes

  3. Mash up garlic, peel ginger, and chop scallions into big segments

  4. Layer everything into rice cooker in this order: rice, salted chicken stock (1:1 ratio rice and stock depending on how many you are serving,) ginger, garlic, chicken, and scallion

  5. Set rice cooker to "cook" or "mixed rice" setting

  6. Make the sauce while you wait: mince garlic and shallots, chop up scallions, then heat up some neutral oil and pour over the aromatics

  7. Once the rice cooker is done, serve hot with dressing and vegetable of your choice
