Mini Pizza Bites (High-Protein!)

Looking for an easy, meal-preppable breakfast that’s packed with protein to keep you full throughout the day? Try these mini pizza bites made with a cottage-cheese dough that’s customizable to your favorite toppings!


Ingredients:

  • 1 cup all-purpose flour

  • 1 cup cottage cheese

  • 1 tbsp garlic powder

  • your pizza base of choice: pesto paste, tomato paste, bbq sauce, etc.

  • your pizza toppings of choice: grounded sausage, onions, peppers, pepperoni, mozzarella, sun-dried tomatoes, etc.

Equipmemnts:

  • Baking tray

  • Aluminum foil

  • Mixing bowl


Instructions:

  1. Preheat oven to 350 degrees F

  2. Mix flour, cottage cheese, and garlic powder in a mixing bowl

  3. Knead mixture together until dough forms [NOTE: sprinkle more flour into the dough and on your working surface as you knead as the dough will be sticky as the cottage cheese starts incorporating]

  4. Split dough into 16 pieces

  5. Form each piece into a round ball and press flat from the center outwards to ensure your pizzas don’t turn out with a thick center [NOTE: aim for thinner middle and thicker outer disc]

  6. Spread your choice of sauce base on each disc and top off with your choice of toppings

  7. Line baking tray with aluminum foil and place mini pizzas across the tray, making sure they’re not touching each other

  8. Bake for 10 - 12 minutes and enjoy!
