Shrimp Wontons (Easy Folding Method)
An easy and quick folding method for your everyday meal. Make these in bulk and freeze so you can add to soups, noodles, or serve as the main entree for some extra protein intake!
Ingredients:
1 lb raw, tail-off shrimp
1 clove garlic, minced
3 - 4 stalks of garlic chives, chopped into small segments
2 tsp ginger, minced
1/2 block of soft tofu
2 tsp corn starch
2 tsp sesame oil
2 tsp soy sauce
1/4 tsp white pepper
1/4 tsp black pepper
1/4 tsp salt
1 pack of store-bought, square wonton skins
Instructions:
Beat the shrimp with a knife’s flat surface until the shrimp is squished up and slightly mushy, then roughly chop throughout
In a mixing bowl, put together the shrimp, garlic, garlic chives, ginger, tofu, corn starch, sesame oil, soy sauce, white and black pepper, and salt
Use your hands to incorporate everything together, making sure the tofu is spread throughout the mixture
Set up your folding station with a small bowl of water, the bowl of fillings, and a lightly floured cutting board or plate (for keeping the already folded wontons)
Place a sheet of wonton skin in the middle of your non-dominant hand and scoop a small dollop of filling in the middle (do NOT overfill!)
Dab all four sides of the wonton skin with water then fold the wonton skin hot-dog style, securing the fold with your thumb and index fingers
Flip the wonton upside down and seal the two bottom sides with another dab of water
If the filling start to burst out - squeeze and remove some out before sealing the opening back up again
Notes:
You can cook these right away in soups or with noodles, or even by itself with a soy-vinegar based sauce
You can also place them flat in a Ziplock bag to freeze up to 3 months
