Crispy Rice Paper Dumplings
If you're ever wondering... "What else can I make with rice paper??" Make these crispy on the outside and juicy on the inside shrimp dumplings! In my honest opinion, these taste better than regular dumplings.
Ingredients:
Dumplings:
1 cup of shrimp
2 - 3 stalks of green onions
1/4 cup of riced cauliflower
1 tsp of black pepper
1 tsp of ginger powder
2 tsp of cornstarch
2 tsp of sesame oil
1 tsp of oyster sauce
Rice paper
Sauce:
1 stalk of green onion
1 tsp of sugar
1 tsp of sesame oil
1 tbsp of soy sauce
1 tbsp of water
1 tsp of rice vinegar
1 tsp of fish sauce
1 tsp of sugar

Instructions:
Mix together shrimp, green onions, cauliflower, black pepper, ginger powder, corn starch, sesame oil, and oyster sauce in the food processor
Cut rice papers in half and lay them on a wet cutting board
Wet the rice paper with by dipping an oil brush in a cup of water and brush the water all over the rice paper
Scoop a tablespoon-sized filling into the center of the rice paper
Fold the long sides towards the center, then close off by bringing the two sides into the center (once the dumplings are formed, you want to move them fairly quickly to the frying pan or they’ll start sticking to the cutting board
Heat up a pan with neutral oil
Fry each dumpling on both sides, making sure they’re not touching each other
Once each side is lightly browned, the dumplings are cooked!
Served with or without the sauce (dumplings by itself is savory enough for my kids, but I like a little kick!)
