Crispy Fried Enoki Mushrooms (Vegan)
These fried enoki mushrooms are crispy on the outside, and hot and juicy on the inside! It’s another delicious way to pack some proteins in while satisfying your cravings!
Ingredients:
2 packs of enoki mushrooms
1/4 cup of all purpose flour
1/4 cup of cornstarch
1/4 tsp of baking powder
1/2 tbsp of olive oil
1/8 tsp of salt
3/4 cup of ice cold water
Vegetable oil for shallow frying
Four Season Scallion Sauce for dipping
Instructions:
Remove the stem of enoki mushroom bundles with a knife and wash
Slice enoki mushrooms from the stem to the bulb into 3 - 4 layers depending on how round the bundle is
Break the bigger (now sliced) bundles into halves or thirds
Lay all the bundles onto a paper toile and pat dry lightly
Prepare batter by mixing all purpose flour, cornstarch, baking powder, oil oil, and salt together
Add iced cold water into mixture while mixing (you may end up needing a tad more water depending on the viscosity) until you reach a “pancake batter” consistency
Heat up oil in the pan with enough oil to partially immerse the enoki mushrooms for shallow frying
Evenly coat enoki mushrooms into the batter; allow the excess batter to drip off before moving into the pan
Fry enoki mushrooms without overcrowding the pan
Flip enoki mushrooms over when the first side starts to turn slightly brown
Transfer the fried enoki mushrooms to a plate with paper towel to absorb the excess oil from frying
Drizzle Four Season Scallion Sauce all over fried enoki mushrooms and serve!
